What is Green Goddess Dressing?

The history of this 1920’s dressing is somewhat unknown, but the basic belief is that the chef at The Palace Hotel in San Francisco came up with this dressing as a way to pay homage to The Green Goddessplay. Sour cream, mayonnaise, chervil, chives, anchovy, lemon juice, and pepper are blended to create a Caesar-like dressing with a more vibrant flavor and less tang. It has gone through various waves of popularity, and many different flavor combinations, but the basis is the same: fresh herbs, creamy components, and a touch of citrus or vinegar.

Is Green Goddess Dressing Paleo?

Well, the original green goddess dressing calls for non-Paleo ingredients like sour cream, but you can easily make a Paleo version at home! Use ingredients like homemade Paleo mayonnaise or ripe avocados for that creamy texture, and you’ve got yourself an awesome Paleo-approved Green Goddess salad dressing!
